These blondie bars combine cashew butter, dark chocolate and roasted cashews for a sweet-and-salty flavor twist.

Ingredient List

  • 1 cup Gold Medal™ all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup packed brown sugar
  • 1/3 cup butter, softened
  • 1/3 cup unsalted roasted creamy cashew butter
  • 1 egg
  • 1/2 teaspoon vanilla
  • 1/2 cup dark chocolate chips
  • 1/2 cup salted roasted whole cashews

Preparation

  1. Heat oven to 350°F. Spray 9-inch square pan with cooking spray. In small bowl, mix flour, baking powder and salt; set aside.
  2. In large bowl, beat brown sugar, softened butter and cashew butter with electric mixer on medium speed until light and fluffy. Beat in egg and vanilla until blended. Stir in flour mixture until just blended. Spread batter evenly in pan. Sprinkle chocolate chips and cashews over top; press lightly into batter.
  3. Bake 16 to 19 minutes or until center just jiggles slightly and edges are light brown. Cool completely, about 3 hours or until chocolate is set. Cut into 4 rows by 4 rows. Store covered in airtight container at room temperature.

Tips

  • Roasted or raw, salt or no salt, creamy or crunchy—cashew butters do vary! We tested this recipe with unsalted roasted creamy cashew butter. Feel free to pick your favorite to try in this recipe.
  • The secret for cutting bars easily is to line the pan with heavy-duty or nonstick foil. When it is time to cut the bars, just lift the baked bar with the foil out of the pan, and cut. This also makes cleanup extra easy.
