Ingredient List

  • 2 cups Gold Medal™ all-purpose flour
  • 1 cup sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 cup butter, melted
  • 1/2 cup sour cream
  • 1/4 cup orange juice
  • 2 eggs, slightly beaten
  • 1 tablespoon grated orange peel
  • 1 teaspoon vanilla
  • 1 1/2 cups fresh cranberries, coarsely chopped
  • 1/2 cup powdered sugar
  • 2 to 3 teaspoons orange juice
  • Orange peel strips, if desired

Preparation

  1. Heat oven to 350°F. Grease bottom only of 8x4-inch loaf pan.
  2. In large bowl, stir together flour, sugar, baking powder and salt.
  3. In medium bowl, mix melted butter, sour cream, orange juice, eggs, grated orange peel and vanilla until blended. Stir in cranberries.
  4. Add cranberry mixture to flour mixture; stir just until moistened. Spread batter in pan.
  5. Bake 65 to 75 minutes or until toothpick inserted in center comes out clean. Cool 15 minutes. Loosen sides of loaf from pan; remove from pan. Cool completely, about 45 minutes.
  6. In small bowl, mix powdered sugar and 2 teaspoons orange juice, adding additional orange juice and stirring until glaze is thin enough to drizzle. Drizzle over loaf. Top with orange peel strips.

Tips

  • To prevent overbrowning, cover loosely with foil for last 15 minutes of baking.
  • Grease only bottom of pan for quick breads. Ungreased sides of pan allow batter to cling while it rises and gives the loaf a nice rounded top.
