Cranberry-Orange Quick Bread

Liven up traditional quick bread with zesty cranberries and orange peel. It looks and tastes amazing!
Ingredient List
- 2 cups Gold Medal™ all-purpose flour
- 1 cup sugar
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 1/2 cup butter, melted
- 1/2 cup sour cream
- 1/4 cup orange juice
- 2 eggs, slightly beaten
- 1 tablespoon grated orange peel
- 1 teaspoon vanilla
- 1 1/2 cups fresh cranberries, coarsely chopped
- 1/2 cup powdered sugar
- 2 to 3 teaspoons orange juice
- Orange peel strips, if desired
Preparation
- Heat oven to 350°F. Grease bottom only of 8x4-inch loaf pan.
- In large bowl, stir together flour, sugar, baking powder and salt.
- In medium bowl, mix melted butter, sour cream, orange juice, eggs, grated orange peel and vanilla until blended. Stir in cranberries.
- Add cranberry mixture to flour mixture; stir just until moistened. Spread batter in pan.
- Bake 65 to 75 minutes or until toothpick inserted in center comes out clean. Cool 15 minutes. Loosen sides of loaf from pan; remove from pan. Cool completely, about 45 minutes.
- In small bowl, mix powdered sugar and 2 teaspoons orange juice, adding additional orange juice and stirring until glaze is thin enough to drizzle. Drizzle over loaf. Top with orange peel strips.
Tips
- To prevent overbrowning, cover loosely with foil for last 15 minutes of baking.
- Grease only bottom of pan for quick breads. Ungreased sides of pan allow batter to cling while it rises and gives the loaf a nice rounded top.
