Knowing a little bit about this important ingredient can take you a long way. Put simply, flour is the byproduct of milling and sifting wheat berries, then grinding them into a powder. But, different types of wheat create different types of flour. Hard wheat, which is high in protein, is great for bread, whereas soft wheat, lower in gluten-forming proteins, makes it perfect for cakes.
